Porridge is usually made from different kinds of grain types in milk or water. Also potatoes, turnip, rutabaga and beans can be used in it. Porridge was widely known as ‘huttu’ in the Savonia and Karelia area, and in some places within these areas the word ‘huttu’ referred to floury porridge. In the most Eastern parts of Finland porridge was called ‘kaassa’, influenced by its Russian origin. Gruel consists of the same ingredients as porridge, but the consistency of it is more runny.
