Recipe

The original recipe is taken from the 87th edition of the book Kotiruoka, edited by Kaisa Isotalo and Raija Kuittinen. The first edition of the book was published in 1908.

Ingredients

  • 300 g of juicy spareribs
  • 1 onion
  • (1-2 tbsp of butter)
  • 3 tbsp of wheat flour
  • 5-6 dl of water
  • ½ tsp of salt
  • 1-2 tsp of mustard
  • White pepper or allspice

Method

  1. Cut the meat into thin slices or small cubes and chop the onion in fine pieces.
  2. Brown the pieces of meat on a pan in their own fat and put them into a pot afterwards.
  3. Brown the flour on a pan in the previous meat fat until it gets a gingerbread brown colour. If the meat is low fat, add some more butter in the pan.
  4. Add the chopped onion while browning the flour.
  5. Add half of the water in this mixture and mix it well. Add what’s left of the water and pour this sauce on the meat in the pot.
  6. Add salt and pepper.
  7. Let the sauce cook slowly under a lid for at least half an hour.
  8. Spice the dish with mustard and check the flavour.
  9. Serve with baked potatoes, smashed lingonberry and salad.
