Recipe

The original recipe is from the 2nd edition of the book titled ‘Seuran parhaat perinneruoat’ (2003) edited by Päivi Heininen.

Ingredients

  • 8-10 potatoes
  • 8 dl of water
  • 2 dl of barley flour
  • 2 tsp of salt

Method

  1. Peel the potatoes and slice them into a water with a pinch of salt to boil.
  2. When the potatoes have softened, keep the water and smash the potatoes into a potato mash.
  3. Mix the water with the mash and warm it until the mixture boils.
  4. Whisk the barley flour in it and cook the porridge on low heat, stirring it slowly for approximately an hour.
  5. Enjoy the porridge with a clod of butter and cold milk or with some lingonberry.
